How to prepare a yummy Banana pudding

After a check on the documents on my laptop, I unearthed a delightful treat: Banana pudding. This recipe was from our Nutrition class, as we are required to pass some recipes that can be prepared easily by anyone and at the same time nutritious. Check it out!

Recipe ingredients

1/3 cup all-purpose flour
2 1/2 cups 1% low-fat milk
1 (14-ounce) can fat free sweetened condensed milk
2 large egg yolks
2 tsp. vanilla extract
3 cups sliced ripe banana
45 reduced fat vanilla wafers
4 large egg whites (at room temperature)
1/4 cup sugar
a dash of salt

Directions for cooking

Preheat oven to 325 Fahrenheit. Mix flour and salt in a medium saucepan. Slowly put in milks and yolks; mix well. Cook over medium heat 8 minutes or until thick, stirring constantly. Remove from heat; blend in vanilla. Assemble 1 cup banana slices in bottom of a 2-quart baking dish. Place one-third of pudding mixture over banana. Arrange 15 wafers on top of pudding. Repeat layers twice, arrange the last 15 wafers around edge of dish. Put cookies into pudding. Blend egg whites in a mixer until foamy. Slowly add 1 tablespoon of sugar at a time, beating until stiff. Spread meringue evenly over pudding, sealing to edge of dish. Bake for 25 minutes or until golden in color. Allow to at least 30 minutes before serving to allow pudding to thicken. Serves up to 10 persons.
